"ANSI-CFP requirements for food management exams are extensive," Viso explained. "It has to be a proctored exam; you must verify the identification of the individual taking it. The examinee can't be with another person; they can't have things on their desk, they can't use notes, have cellphones, all that has to be strictly monitored. We have to prove that we're doing those things to the accreditation board."
